For Your Information - Coffee Trade
Coffee grows on vast Brazilian plantations and is collected from the wild in Ethiopian forests. It is cultivated on the ancient terraces carved into the steep mountainsides of Yemen and on Indonesian smallholdings, where the beans can be spread out to dry on the side of the road. All of these beans make their way into markets, local and global. In volume, coffee is the second most traded commodity in the world. At Cafe Kili, we taste new crops and roast each batch of beans to perfection to bring out the optimum flavors.

Recipe of the Month - Walnut Coffee Kisses
These "kisses" are delicate walnut and coffee cookies joined with a rich chocolate-coffee ganache.
1/2 C walnuts
1 stick unsalted butter
4 1/2 tablespoons caster sugar
1/2 beaten egg
3/4 C flour
1 1/2 teaspoon espresso powder
4 oz. bittersweet chocolate
1/2 C heavy cream
2 baking trays covered with nonstick parchment paper
Heat your oven to 350 degrees. Finely chop walnuts. Put the butter and sugar into a bowl and beat until creamy. Stir in beaten egg then fold in the sifted flour. Stir in espresso powder and walnuts. Put an even number (about 24) tablespoons of the mixture onto baking trays. Bake for 10 minutes. Carefully let cool and transfer to wire rack. Meanwhile to make ganache, break chocolate into pieces and put into a saucepan. Add 4 tablespoons of unsalted butter and cream and begin to heat without boiling. Beat in espresso powder. Remove from heat and stir. Carefully sandwich the cool cookies together with the ganache. Enjoy!
